How to Infuse Honey with Lemon---and Why It's Great for You!
You've probably heard how good it is for your body and health to drink a cup of water with honey and lemon every day? Well, after being given bags of beautiful fresh lemons, I thought I'd go ahead and make some lemon infused honey!
Not only is this honey absolutely delicious, you can use it for so much! It's great for soothing sore throats and coughs, you can sweeten your herbal tea with it, use it on toast or as a topping....or just take a spoonful because it's just SO good!
And of course, you can use it in your lemon-honey water! :-) Here's how to infuse your honey with delicious, great for you lemons!

What You'll Need to Infuse Your Honey with Lemon
1) Lemons, sliced and zested
2) Honey
Tools for Infusing Your Honey with Lemon
1) Saucepan
2) Strainer
How to Infuse Your Honey with Lemon
Step 1) Zest your lemon(s) I used about 2 lemons for about a cup and a half of honey
Step 2) Pour your honey, lemon zest, and a couple of extra slices of lemon (optional) into your saucepan.
Step 3) Heat on LOW for about 10 minutes or so. You don't want to overcook the honey, but you want time for the lemon zest to release the oils into the honey.
Step 4) Strain out the zest and slices if you used them.
Step 5) Pour your infused honey into jars!

Why is Honey and Lemon Great for You?
It's a pretty well-known fact that lemon honey water is good for your health when taken daily. Here are some of the things being said about Lemon & Honey in water:
1) It's great for your immune system
2) It may help with weight loss---Personally, if I were going to use this for weight loss, I'd sprinkle in a bit of cayenne pepper to increase circulation and speed up the metabolism too!
3) It helps your body detox--since this mixture has diuretic properties, it helps both your liver and kidneys flush out toxins.
4) Since it's great for flushing toxins from the body, it will help your skin be fresh and clear.
5) It may help with mild cholesterol issues--decreasing the bad, while possibly helping to increase the good.
At any rate, putting all the potential health benefits aside, this stuff is GREAT! Use it in your water, but feel free to use as a special sweetener and for soothing sore throats too.
